Welcome to my healthy eating page for all you who are looking for some easy ideas to start eating a little healthier but still make things your kids will eat too. I’m definitely not an expert on healthy eating…I’ve been known to toss back a Big Mac or twenty in my time, but since being diagnosed with Eosinophilic Colitis and removing wheat (gluten), dairy, egg, soy, shellfish, fish and nuts either partially or completely from my diet, I am feeling better and along the way have learned some tips on cooking healthier. So, enjoy and please feel free to send me your ideas and suggestions!
* When frying things…olive oil works just as well as butter. Growing up my mom made the best fried potatoes ever. Yummy. Butter, sliced potatoes, onions, salt & pepper and garlic salt. Make it healthier…eliminate the butter and use olive oil. And use fresh garlic. Or if you like that buttery taste. Use vegan butter…no dairy, soy or egg.
*One of my favorite breakfasts – put a little olive oil in a frying pan. Slice up some bell peppers and mushrooms, even throw in some pre-cooked chicken if you have it. Add some sea salt, pepper and fresh garlic. Serve on white corn tortillas (organic if you can afford it). For a little extra flavor I like to grate some manchego (cheese from sheep’s milk) and you can add a little salsa (homemade preferrably)!
